Opis Szczepy: Shiraz Winogrona Shiraz zostały nasadzone w dolinie Upper Hunter przez najstarszych osadników. Szczep ten okazał się doskonale dopasowany do lokalnych warunków. W efekcie, stał się wizytówką Australii w większym stopniu, niż w swojej ojczyźnie, tj. Północnej Dolinie Rodanu. Black Cypress Shiraz powstaje z połączenia winogron z 40 letnich krzewów i młodszych nasadzeń. Winogrona ze starych krzewów nadają winu intensywny charakter, wysoką koncentrację i solidną strukturę. Młodsze winorośle natomiast świeżość i nuty owoców. Połączenie to sprawia, iż wino jest przyjemne do picia już teraz, a zarazem posiada zdolność dojrzewania przez następne pięć lat.

WINEMAKING Grapes were hand harvested in 25 lb boxes, delivered to the winery, then hand- sorted twice, once for grape imperfections and then for green material in the must. Fermentation was slow due to the altitude (lower oxygen), and there was extended maceration, totaling 25 – 30 days. Malolactic fermentation occurred 50% in barrels and 50% in tank. WINEMAKER COMMENT S The color is deep magenta with a purple hue. This wine is sophisticated on the nose with violets, black fruits, clove, and black pepper followed by flavors of elderberries, nutmeg and cassis. It is a full bodied and rich wine with thick, mouth coating texture. Subtle French oak and toast flavors are well balanced providing vanilla and toasted bread flavors. The palate shows spicy, cinnamon notes, rich flavours of dark chocolate, black cherry and blueberry, and a fi ne tannin grip to the finish. This wine will continue to develop in bottle for 4-6 years from harvest. The palate features the same red berry fruits completed by baking spice flavours and integrated soft tannins. This wine will continue to develop in bottle for 2-5 years from harvest. They are the perfect illustration of wines that can be wonderfully textured and complex without having to be huge, oaky and tannic. Fruit Pinot Noir grapes from six different vineyards from all over the Mornington Peninsula including six different clones have been blended to make this wine. Maturation This wine was given a cool soak for two days and then inoculated for fermentation in stainless steel tanks. It was then gently pressed and allowed to finish primary fermentation before racking off gross lees. It was inoculated for malolactic fermentation and transferred to French oak barriques (25% new). Some material was allowed to stay on skins for a few days after fermentation prior to pressing. The wine then matured for 9 months, during which it completed its malolactic fermentation. This treatment maximizes the delicate and subtle Pinot flavours, aromas and textures. Technical Analysis Alcohol 12.5%. Best Drinking The Red Hill Estate Pinot Noir drinks well at an amazingly young age and is best consumed within 3 years if you want just the cherries, plums and strawberries. If you want it to walk a little on the wilder side, wait 5 years for extra savoury and gamey characters and for the full monty of Burgundian complexity leave if for at least seven years. Product Code: RH19071; Tasting Notes Pinot Noir has been one of the Mornington Peninsula’s shining stars for some time now and the wines just seem to get better and better. They are the perfect illustration of wines that can be wonderfully textured and complex without having to be huge, oaky and tannic. Fruit Pinot Noir grapes from six different vineyards from all over the Mornington Peninsula including six different clones have been blended to make this wine. Maturation This wine was given a cool soak for two days and then inoculated for fermentation in stainless steel tanks. It was then gently pressed and allowed to finish primary fermentation before racking off gross lees. It was inoculated for malolactic fermentation and transferred to French oak barriques (25% new). Some material was allowed to stay on skins for a few days after fermentation prior to pressing. The wine then matured for 9 months, during which it completed its malolactic fermentation. This treatment maximizes the delicate and subtle Pinot flavours, aromas and textures. Technical Analysis Alcohol 12.5%. Best Drinking The Red Hill Estate Pinot Noir drinks well at an amazingly young age and is best consumed within 3 years if you want just the cherries, plums and strawberries. If you want it to walk a little on the wilder side, wait 5 years for extra savoury and gamey characters and for the full monty of Burgundian complexity leave if for at least seven years.
